Types of knives

Cooking knives

There are so many types of knives that it can be hard to determine which one is the best. For cooking, you might want to have a few different types on hand so that you have the correct knife for the job. The chef’s knife is a great all-purpose knife that can be used for a variety of tasks. A paring knife is a great little knife that is meant for smaller jobs.

At the end of this article, you will find a table of all the different types of knives and their uses.

Knives as tools

Knives can be used as both a tool and as a weapon. If you use a knife as a tool, it will become an extension of your arm.

Bread knives

The bread knife is a specialized type of kitchen knife that is typically used to slice through the crusty outer layer of a loaf of bread or cake without squishing or tearing the interior. Bread knives come in a variety of sizes and shapes, but most have a serrated blade and a wide cutting edge.

Butter knives

The butter knife is an odd-looking kitchen utensil. While the edges are fairly sharp, the tip of the knife tends to be flat so that it will not actually cut into the food being prepared.

Biscuit knives

The biscuit knife is a small and slender knife used to cut out biscuits and other small pastries that don’t require the use of the chef’s knife.

Throwing knives

Typically used by circus performers, throwing knives are typically lighter than other types of knives and used for professional performances or even at home for entertainment. The knives are usually one-handed and some varieties are designed with the blade on one side and the handle on the other. They can be bought in sets or singles.

Fish knives

The fish knife is a type of knife designed for cutting through the bones in fish. The knife is designed to cut quickly through the bones without damaging the flesh.

Utility knives

Utility knives are knives with the same general shape as kitchen knives but are designed to be multipurpose. They are generally more durable than kitchen knives and are used for many different tasks.

Knife sharpening

Some people might not know how to sharpen their knives, but there are different types of knives that might need different approaches. There are four basic types of knives: Chef’s knife, utility knife, fillet knife, and paring knife. Sharpening a chef’s knife is done by using a steel rod to wipe off metal residue while sharpening the blade. Utility knives are usually serrated and should be sharpened on a whetstone or with an electric knife sharpener.

The best way to sharpen a fillet knife is by using the coarse side of the steel. Paring knives can be used on both soft and hard foods and should be sharpened with the fine side of the steel.

The whetstone should be kept wet at all times, otherwise, the knife will become blunt.

The correct way to hold sharpening steel is with the thumb on the top of the handle, forefinger next to the spine of the blade, and middle finger between the blade and the steel.
